IT ALL STARTS AT THE COFFEE FARM
Grown and processed by Dudy A. Busyori, this coffee comes from his plantation deep in a forest about an hour outside of Ciwidey, in the Kebun Bintoha region. Pak (which means “sir”) Dudy’s washing station, named Perkoci Camp, is situated directly behind his home and roastery on about 1 acre of land.
Reaching the plantation is an adventure: after driving through multiple villages nestled in mountainous highlands, eventually, the only way to reach the farm is by ditching your car and hiring a taxi driver with a specially modified off-road motorbike to take you the rest of the way. Ciwidey is a small town just southeast of Indonesia’s fourth largest city, Bandung. Bandung is located on the western side of Indonesia’s most populous island, Java, surrounded by mountains on all sides.
We purchased this coffee through Cahaya importers, and they shared this information: "After the coffee is picked, it is transported by motorbike to a truck that will take the coffee back down the mountain towards Ciwidey. Pak Dudy’s washing station Kebun Bintoha is situated directly behind his home and roastery on about 1 acre of land. Pak Dudy is very generous with his time. He loves to drink coffee, train other farmers in roasting and cupping, and he is an off-road enthusiast who loves camping with his kids and roughing it in the jungle. You’ll always find him with his V60, making coffee somewhere wild and remote. Pak Dudy is also a deeply religious man who donates to charity and serves in caring for the underprivileged. He gave up his busy, hectic life in Jakarta to return to his Sunda homeland and grow coffee. Our team first met him at a coffee festival in Bandung. We were immediately taken aback by his passion for coffee and his love for natural processing (which is hard to do in a country as humid and rainy as Indonesia). Pak Dudy worked exclusively with Cahaya this year and his washed coffee blew us away."

WHY DID WE SELECT THIS COFFEE?
It's such a treat to have a coffee from Java in this light roasted Balanced profile, as coffees from Java have a reputation for being more toasty, chocolatey and mild. This coffee is anything but! We were really impressed with its white grape-like acidity, floral aromas and caramel sweetness.

HOW DID WE ROAST THIS COFFEE?
This coffee is being roasted by Ian T. from September 09 to October 02 in Brooklyn. We use the Loring Kestrel roaster for this profile. We have strict guidelines for each of the coffee profiles, and this roast has to pass the development time ratio test as measured in real-time by the roasting software, Cropster. Once it does, it is approved for production.
QUALITY CONTROL
We perform Quality Control via a process of coffee tasting called cupping on all of our production roasts once a week at our roastery in Williamsburg, Brooklyn. Each cupping is conducted by Ian T., Anu M., Suyog M., and James M. using standard equipment, and is logged by our Q-certified cupper Ian T. All coffees are evaluated on a scoring scale of 0 to 3.
- 3.0 = exceptional roast - exceeds expectations
- 2.5 = on par with profile - matches expectations
- 2.0 = good roast, but 1 or 2 elements could be improved - needs improvement
- 1.5 or lower = failed - do not ship
