This coffee is a blend of three amazing coffees:
FINCA AMALIETH, COSTA RICA
Doña Rosa Aura and her husband, Carlos Ramírez Martínez, run this family farm, named after their mothers, Amalia and Elieth. For 23 years, they’ve preserved the farm’s surrounding biodiversity while involving their entire family in coffee production. This coffee was sourced through Bean Voyage, a feminist non-profit supporting gender equity in coffee. Doña Rosa Aura is a graduate of their Care Trade program.
KILIMBI, RWANDA
Located in Nyamasheke, near Lake Kivu, the Kilimbi washing station is led by agronomist Joseph Ntarindwa, who pioneered natural and honey process exports in Rwanda. Known for quality and innovation, the station provides farmers with ongoing support. Partnering with Higa Coffee ensures fair prices and relationship-based sourcing, vital for sustainability. This is our second coffee sourced from them.
TRIUNFO VERDE, CHIAPAS, MEXICO
This cooperative of 447 small producers in the El Triunfo Biosphere Reserve grows coffee under shade trees in harmony with nature. The reserve, home to Mesoamerica’s largest cloud forest, promotes sustainable farming in its buffer zone while preserving biodiversity. Triunfo Verde combines environmental education, agronomy training, and community development, showcasing a model for sustainable coffee production.

HOW DID WE ROAST THIS COFFEE?
This coffee is being roasted by Ian T. from April 22 to May 15 in Brooklyn. We use the Loring Kestrel roaster for this profile. We have strict guidelines for each of the coffee profiles, and this roast has to pass the development time ratio test as measured in real-time by the roasting software, Cropster. Once it does, it is approved for production.
QUALITY CONTROL
We perform Quality Control via a process of coffee tasting called cupping on all of our production roasts once a week at our roastery in Williamsburg, Brooklyn. Each cupping is conducted by Ian T., Anu M., Suyog M., and James M. using standard equipment, and is logged by our Q-certified cupper Ian T. All coffees are evaluated on a scoring scale of 0 to 3.
- 3.0 = exceptional roast - exceeds expectations
- 2.5 = on par with profile - matches expectations
- 2.0 = good roast, but 1 or 2 elements could be improved - needs improvement
- 1.5 or lower = failed - do not ship

Less than 24 hours after roasting, we bag your coffee in our production facility in Greenpoint, Brooklyn. Our production team is led by Torie, and supported by a rotating cast of local artists, musicians and independent professionals.
