IT ALL STARTS AT THE COFFEE FARM
Colombia: Our sourcing partner, Unblended Coffee, worked with several women growers to bring us this special coffee. It has a sweet, floral profile, a creamy body, and a caramel finish that lingers beautifully. But there’s more to it than just flavor—this coffee helps women producers grow their farms and develop their skills in specialty coffee. Made mostly from floral varieties like Chiroso, it’s a step toward crafting more refined and consistent small-batch coffees while celebrating the work of these talented women.
Guatemala: Jesus Rodriguez started growing coffee 27 years ago with just 200 plants, collecting seeds from neighbors. He expanded slowly, planting shade trees like pines, which now provide the majority of the shade for his coffee to grow under. Now exporting his coffee, he also grows native plants while reforesting with cypress and oak. Yet, multinational companies threaten his land. In Jesus' words: “This led us to organize as a group to resist these companies and defend our land and Mother Nature. This is what we call her because she gives us food just as she gives us life.
Since 2015, we’ve been more actively involved in resistance groups, and to this day, I’m in charge of a resistance group that stands guard 24 hours a day. We spent ten months in the Constitutional Court, constantly resisting the multinational companies that threatened our land by polluting our water and everything we possess. We’ve seen the damage that mining has caused, and we’ve also faced the impact of coffee roya disease, which has been costly and labour-intensive, affecting our yields. In the past, we didn’t have to fight this disease, but now we need to spray to protect against it, or else we can’t harvest, export, or provide food for our families.” Jesus takes pride in sustaining his community and nature. Grateful for international support, he remains committed to organic farming and environmental justice.

HOW DID WE ROAST THIS COFFEE?
This coffee is being roasted by Ian T. from Jun 16 to Jul 10 in Brooklyn. We use the Loring Kestrel roaster for this profile. We have strict guidelines for each of the coffee profiles, and this roast has to pass the development time ratio test as measured in real-time by the roasting software, Cropster. Once it does, it is approved for production.
QUALITY CONTROL
We perform Quality Control via a process of coffee tasting called cupping on all of our production roasts once a week at our roastery in Williamsburg, Brooklyn. Each cupping is conducted by Ian T., Anu M., Suyog M., and James M. using standard equipment, and is logged by our Q-certified cupper Ian T. All coffees are evaluated on a scoring scale of 0 to 3.
- 3.0 = exceptional roast - exceeds expectations
- 2.5 = on par with profile - matches expectations
- 2.0 = good roast, but 1 or 2 elements could be improved - needs improvement
- 1.5 or lower = failed - do not ship

Less than 24 hours after roasting, we bag your coffee in our production facility in Greenpoint, Brooklyn. Our production team is led by Anthony and Torie, and supported by a rotating cast of local artists, musicians and independent professionals.
