IT ALL STARTS AT THE COFFEE FARM
This coffee was grown by the 50 members of the Asociación La Victoria, a cooperative located in the foothills of the Nevado del Huila (Huila volcano). The association supports farmers with housing assistance, education, crop improvement, and access to finance. Our partner importer, Coffee Quest, became acquainted with this group through the president of the co-op, Andrés Perdomo.
Santa Maria has been producing high quality coffee for generations, but they’d been closed off from the rest of Colombia for decades because of the presence of guerillas in the region. There are only two narrow, unpaved access roads along very steep cliffs, so it was almost impossible for prospective coffee buyers to reach them. This means that farmers were rarely compensated for the exceptional quality of coffee that they’ve been growing season after season. For us, their work translates to an exceptional syrupy sweetness reminiscent of caramelized sugar and winter spices.

WHY DID WE SELECT THESE COFFEES FOR THE BLEND?
We roasted this coffee in the Bold profile last July. It was handed down to us from a neighbor roaster who no longer needed it, as a result of the COVID-related retail shutdowns. Because of this, we met Stephen from Coffee Quest who introduced us to this coffee and gave us a lot of info about the 50 co-op members who grew it.
That was 6 months ago, and now a new harvest has just arrived and we jumped at the chance to roast it fresh off the boat! This particular harvest has a syrupy sweetness that reminds us of caramelized sugar and chocolate as a cold brew.

HOW DID WE ROAST THIS COFFEE?
This coffee is being roasted by Ian T. from 4th January to 24th January in Long Island City, Queens. We typically use the Loring Kestrel roaster for this profile. We have strict guidelines for each of the coffee profiles, and this roast has to pass the development time ratio test as measured in real-time by the roasting software, Cropster. Once it does, it is approved for production.
QUALITY CONTROL
We perform Quality Control via a process of coffee tasting called cupping on all of our production roasts once a week from home as per our Covid-19 shelter in place guidelines. Each cupping is conducted by our roasting staff Kieran D. and Ian T. using standard equipment, and is logged by our Q-certified cupper Ian T. All coffees are evaluated on a scoring scale of 0 to 3.
- 3.0 = exceptional roast - exceeds expectations
- 2.5 = on par with profile - matches expectations
- 2.0 = good roast, but 1 or 2 elements could be improved - needs improvement
- 1.5 or lower = failed - do not ship
