IT ALL STARTS AT THE COFFEE FARM
This coffee was grown and processed by Lus Gladis Martiniez Lizana on her farm, El Pasaco. It's located in the district of Carmen de la Frontera in the province of Huancabamba, region of Piura, Peru, and was imported by our friends at Red Fox Coffee. The area where this coffee was grown is characterized by having extremely varied altitudes, climates and terrain. In the highest part of the Andes in this region (approximately 3,000 meters or 9,800 feet above sea level) we find moors and cloud forests. Up there, it’s too cold to grow anything but potatoes and other tubers.
All this changes if we travel 2 hours north, right near the Ecuador border, into the area known as Selva Alta (high jungle). The climate here is more tropical, vegetation thickens, and agricultural products diversify. It is in this area where we find coffee and sugar cane crops, production of panela and yonque (popular alcoholic beverage in the area).
Born in the coffee producing town of Chaupe Bajo, Luz Gladis been cultivating coffee all her life. Her farm encompasses 2 hectares, all dedicated to coffee and subsistence crops like bananas and yucca for her family’s daily usage. She intersperses Caturra, Catimor and Pache varieties among shade trees including Albizia and Pacay. After processing, she loads parchment onto her truck.
Luz is a passionate coffee producer and wishes to obtain national and international recognition in the future. The name of her farm El Pasaco comes from a medicinal native tree that’s abundant in this area.

WHY DID WE SELECT THIS COFFEE?
Women grow exceptional coffee, but are often overlooked. They make up 70% of the workforce in coffee growing and processing, but make 40% less revenue. They have systemically lower access to resources like land, credit and information.
Starting this year, as we search the world for delicious coffees, we've prioritized buying 50% of our coffees from women farmers. Every coffee you see that comes from women farmers means that the coffee payment went to the women who did the work.
For the Balanced profile, we look for coffees that have a fruity brightness along with a base note or two, and Lus Gladis' coffee delivers this easily. We keep it at a light roast to capitalize on the citrus and stonefruit acidity, and roast just enough to bring out the pleasant almond nuttiness.

HOW DID WE ROAST THIS COFFEE?
This coffee is being roasted by Ian T. from February 25 to March 20 in Brooklyn. We use the Loring Kestrel roaster for this profile. We have strict guidelines for each of the coffee profiles, and this roast has to pass the development time ratio test as measured in real-time by the roasting software, Cropster. Once it does, it is approved for production.
QUALITY CONTROL
We perform Quality Control via a process of coffee tasting called cupping on all of our production roasts once a week at our roastery in Williamsburg, Brooklyn. Each cupping is conducted by James M. and Ian T. using standard equipment, and is logged by our Q-certified cupper Ian T. All coffees are evaluated on a scoring scale of 0 to 3.
- 3.0 = exceptional roast - exceeds expectations
- 2.5 = on par with profile - matches expectations
- 2.0 = good roast, but 1 or 2 elements could be improved - needs improvement
- 1.5 or lower = failed - do not ship
