IT ALL STARTS AT THE COFFEE FARM
Located in Garzón, Huila, Finca El Corozal is owned by the seven brothers of the Carvajal family. Delfin Carvajal is the leader and face of the family, and his brother Euclides lives at the farm and is responsible for the great natural processed coffee that they started producing last year. This farm is an all-hands-on-deck, family-run operation and each member of the family oversees a different aspect of the business.
Delfin and his family are 4th generation producers, and intensely focused on generational hand-off and the continually improving their processes. The farm is Rainforest Alliance Certified since 2018 - the certification's environmental criteria promote healthier soils, cleaner water, reduced use of synthetic fertilizers and pesticides, biodiversity conservation, and climate change adaptation and mitigation. Additionally, the family has been implementing environmentally friendly practices for the past 10 years, highlighting El Corozal’s conviction for the environment and the families who contribute to the farm’s production.
Processing
They start by handpicking each cherry, floating them, and removing any underripe or overripe cherries. Cherries are then left in open tanks overnight, dried for several days in a greenhouse and then finished in a mechanical drier.

When we tasted this sample that Stephen sent, we were blown away - the care that the Carvajal family took in processing this coffee naturally is obvious. It's juicy, fruit-forward and extremely balanced - not an easy feat for a natural processed coffee! We knew it was destined to be an incredible Fruity profile, and it absolutely compares to the African coffees that usually sit in this profile.

HOW DID WE ROAST THIS COFFEE?
This coffee is being roasted by Ian T. from January 28 to February 21 in Brooklyn. We use the Loring Kestrel roaster for this profile. We have strict guidelines for each of the coffee profiles, and this roast has to pass the development time ratio test as measured in real-time by the roasting software, Cropster. Once it does, it is approved for production.
QUALITY CONTROL
We perform Quality Control via a process of coffee tasting called cupping on all of our production roasts once a week at our roastery in Williamsburg, Brooklyn. Each cupping is conducted by James M. and Ian T. using standard equipment, and is logged by our Q-certified cupper Ian T. All coffees are evaluated on a scoring scale of 0 to 3.
- 3.0 = exceptional roast - exceeds expectations
- 2.5 = on par with profile - matches expectations
- 2.0 = good roast, but 1 or 2 elements could be improved - needs improvement
- 1.5 or lower = failed - do not ship

Less than 24 hours after roasting, we bag your coffee in our production facility in Greenpoint, Brooklyn. Our production team is led by Anthony and Torie, and supported by a rotating cast of local artists, musicians and independent professionals.
